  4. E = Jamaican ESCOVITCH fish - Escovitch fish originated in Spain, where it is known as Escabeche, and was brought to Jamaica by the Spaniards. Escovitch fish is the Jamaican version of Escabeche, as they give the fish its own local twist. Traditionally, a Jamaican escovitch fish consists of fried red snapper topped with vegetables that are sautéed in vinegar, bell peppers, scotch bonnet peppers, pimento seeds (allspice), garlic, and onions. Now, you can find many variations of escovitch fish, as it can be prepared with any fish or vegetables of your choice.

  11. I agree, Michele. I like seeing everyone's work, no matter the tools used. I don't use Affinity at all but that doesn't mean I don't enjoy seeing those creations. To me it's more efficient all on one thread for the month.

Wondering about the name, I found this reference: Why are dogfish called dogfish? from Reptile Pedia - Despite their small size, spiny dogfish are aggressive and have a reputation of relentlessly pursuing their prey. The name "dogfish" stems from their habit of feeding in packs — sometimes numbering in the hundreds or thousands. Gathered together, they sweep an area, eating the fishes in front of them.
